Classic Matar Paneer (Indian Curry)

Ingredients:

  • 1 cup frozen green peas

  • 200g paneer cubes

  • 1 large onion, finely chopped

  • 2 tomatoes, pureed

  • 1 tsp ginger-garlic paste

  • ½ tsp turmeric powder

  • 1 tsp cumin seeds

  • 1 tsp garam masala

  • 1 tsp coriander powder

  • 2 tbsp oil or ghee

  • Salt to taste

  • Fresh coriander for garnish

Method:

  1. Heat oil/ghee in a pan. Add cumin seeds until they splutter.

  2. Add onions and sauté until golden.

  3. Add ginger-garlic paste; cook for 1 min.

  4. Add tomato puree, turmeric, coriander powder, salt, and cook until oil separates.

  5. Add frozen peas and ¼ cup water; simmer for 5–7 minutes.

  6. Add paneer cubes and garam masala; cook 2–3 mins.

  7. Garnish with chopped coriander and serve hot with roti or rice.

  • 1 clove garlic

  • 2 cups vegetable stock

  • ½ cup cream or coconut milk

  • Salt and pepper to taste

  • 1 tsp olive oil

Method:

  1. Heat olive oil in a saucepan, sauté onion and garlic until soft.

  2. Add peas and vegetable stock; simmer for 8–10 mins until peas are tender.

  3. Blend until smooth and creamy.

  4. Return to pan, add cream, adjust seasoning.

  5. Serve hot, garnished with fresh herbs or a drizzle of olive oil.
